Ingredients:

  • 1 beef tenderloin roast (4–4½ lbs), trimmed and tied
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado or olive oil
  • 6 tablespoons softened butter
  • 6 garlic cloves, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped

Instructions:

Prepare the Meat:

Allow the beef tenderloin to come to room temperature for 1-2 hours. Preheat your oven to 425°F (220°C).

Season the Beef:

Pat the roast dry with paper towels. Generously season all sides of the tenderloin with salt and pepper.

Sear the Beef:

Heat oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until golden brown (about 10 minutes).

Add the Herb Butter:

In a bowl, combine softened butter, minced garlic, rosemary, and thyme. Spread the garlic herb butter evenly over the top of the seared tenderloin.

Roast:

Transfer the skillet to the preheated oven and roast for 15-20 minutes or until the internal temperature reaches:

  • 125°F (52°C) for rare
  • 135°F (57°C) for medium-rare

Rest and Serve:

Let the beef tenderloin rest for 10-15 minutes before slicing to allow the juices to redistribute. Remove the twine, slice, and serve with your favorite sides.

Tips:

  • Use a meat thermometer to ensure perfect doneness every time.
  • Pair with mashed potatoes, roasted vegetables, or a tangy horseradish sauce for a complete, satisfying meal.
