Ingredients

For the Bread:

  • 2 to 3 very ripe bananas, mashed (about 1 1/4 to 1 1/2 cups)
  • 1/3 cup (76g) melted unsalted butter
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup (150g) granulated sugar (adjust to taste)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (205g) all-purpose flour

Optional Mix-Ins:

  • 1/2 cup chocolate chips, chopped nuts, or blueberries
  • 1/2 teaspoon cinnamon for extra warmth
  • 1 tablespoon molasses for a deeper flavor

Instructions

Step 1: Prepare the Batter

  1. Preheat your oven to 350°F (175°C). Grease an 8x4-inch loaf pan.
  2. In a mixing bowl, mash the bananas until smooth. Stir in the melted butter.
  3. Add the baking soda, salt, and sugar, mixing well.
  4. Stir in the beaten egg and vanilla extract.
  5. Gently fold in the flour until just combined. If using mix-ins, fold them in now.

Step 2: Bake the Bread

  1. Pour the banana bread batter into the prepared loaf pan.
  2. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  3. If the loaf is browning too quickly, tent it with foil and continue baking.

Step 3: Cool and Serve

  1. Let the banana bread cool in the pan for about 10 minutes.
  2. Remove from the pan and allow it to cool completely before slicing.
  3. Serve as is or with butter, honey, or nut spread.

Storage Tips

  • Room Temperature: Keep wrapped for up to 4 days.
